Prioritise clarity
Use landscape orientation when available, increase tile scale and disable accidental drag gestures if the app provides that option. Separate confirmed melds from loose planning space.

On a phone, make fewer speculative rearrangements. Plan the final table structure first, then execute it in deliberate steps.
